Well, we finally got around to canning some of the salsa from our tomatoes the other night and had some tomatoes left over (more to come on the salsa later). We had also picked a few pods of okra. Since we both love stewed okra and tomatoes, we decided to just throw it all in a pot and make some!
Stewed okra and tomatoes is really a simple and easy side dish to make! And, it was especially good with everything straight from garden to the pot! It was so much better than store bought. You would be surprised at the difference in the taste!
Here’s how to make it:
Ingredients:
Okra (“handful” of medium pods) – sorry, I am from the south and learned old school ![]()
Tomatoes (fresh and skinned or you can use canned)
Onion Powder
Garlic Powder
Salt & Pepper to taste
Instructions:
Cut okra into 1/4″ slices and add to pan. Add in either fresh skinned tomatoes or canned tomatoes, preferably a little more of the tomatoes than the okra. The okra will cause it to thicken and you don’t want it to get to thick. If it does happen, and yep I’ve been there – a quick fix is to add a little tomato sauce with equal parts of water.
Add each seasoning by sprinkling over the ingredients in the pot until covered lightly. Again, no exact measurement, but this really works!
Stew over med-low heat until okra is tender.
Okra and Tomatoes is enjoyed as a side dish with most meats.
