I’m Greek and my favorite dish to cook is called Pastitsio which is made in a pan the oven with elbow macaroni, chopped meat made in layers similar to Lasagne but covered with a white Bechamel sauce that forms a a firm cheese custard on top. Great for feeding a crowd! freezes great too!

I have a wonderful recipe for White Chili! Not only is it delicious, but it is also a sentimental comfort food. My pastor’s wife, and good friend, got the recipe from her mom … her mom died of cancer when my friend was in her late teens. This past March, my friend passed away from brain cancer … leaving behind her husband and two young sons. I miss her so much! In her final weeks of illness, I joked with her that I will never forget her because her recipe is one of the only meals that I can actually cook well!!!
