This Easy Pork Fajitas recipe is a good meal for nights when we need something quick and easy. The secret to the quickness is in the meat. The pork tenderloin or pork fillets cook really quick. It makes a very satisfying and easy Mexican meal
Easy Pork Fajitas
Dale’s Seasoned Tenderloin or Farmland Portobello Pepper Pork Fillet – cut into strips (cutting against the grain)
red bell pepper – sliced into strips
green bell pepper – sliced into strips
onion – sliced into strips
if desired – you can add other vegetables such as squash
onion powder – to taste
garlic powder – to taste
Season All – to taste
Spicy Montreal Steak seasoning – to taste
Cut up all vegetables into large mixing bowl. Add all the seasonings. Set aside.
Brown the meat (we use a griddle). Once brown, take off and set aside.
Add the vegetables to the griddle (or pan). When almost done, add the meat back to the mixture. Continue cooking until vegetables are done.
Wrap in tortillas. We serve ours with Refried Beans, Mexican Rice, Salsa and Chips
