This easy Cucumber Salad recipe was found in an All You magazine a couple of years ago. We love this recipe and it is especially delicious with fresh cucumbers from the garden! It goes great with any grilled meat or BBQ for a light, unique side dish! We have already prepared it once this year with fresh cucumbers from our garden on Memorial Day to go with our BBQ
Easy Cucumber Salad
1 red onion, halved and thinly sliced
3 Tbsp. rice vinegar
3 cucumbers, peeled, seeded and thinly sliced
salt and pepper
2 Tbsp. olive oil (can substitute vegetable oil in a pinch and works fine)
2 Tbsp. chopped fresh dill (we use dried)
Toss onion with 1 Tbsp. vinegar; set aside.
Place cucumbers in a colander and toss with 1/4 tsp. salt. Drain for 10 minutes. Pat dry.
Mix onion and cucumbers in a large bowl. Toss with olive oil and remaining 2 Tbsp. vinegar.
Add dill; season with salt and pepper.
Cover and chill until ready to serve.
