Looking for party foods? I got this Barbecue Meatball recipe from a magazine a few years ago and wanted to share it with you. It is great for a get-together and parties. I especially like making them for our annual super bowl party!
Ingredients:
1 cup soft bread crumbs
1/3 cup milk
3/4 lb ground beef round
3/4 lb lean ground pork
3/4 cup finely grated Parmesan cheese
1 small onion, finely chopped (1/3 cup)
1/3 cup chopped fresh parsley
1 egg, slightly beaten
2 cloves garlic, finely chopped
1 tsp salt
1/4 to 1/2 tsp freshly ground pepper
1 bottle (18 oz) barbecue sauce
Instructions:
1. Heat oven to 400 degrees. In a small bowl, mix bread crumbs and milk. Let stand 10 minutes. Squeeze bread crumbs gently to remove excess liquid.
2. In large bowl, place soaked bread crumbs, beef, pork, cheese, onion and parsley. In small bowl, mix egg, garlic, salt and pepper. Add to meat mixture. Using hands, gently mix ingredients until well blended (do not over mix). Shape mixture into 28 meatballs. Place in 17×12-inch half-sheet pan. Bake 20 minutes or until no longer pink.
3. Spray 3 1/2-to-4 quart slow cooker with cooking spray. Use a slotted spoon to transfer meatballs from pan to slow cooker. Pour barbecue sauce over meatballs; stir to coat.
4. Cover; cook on Low setting 3 hours. Serve meatballs with cocktail forks or toothpicks. Meatballs can be held on Low heat setting up to 2 hours; stir occasionally.
