Quick and Easy Baked Mexican Pasta

Here are the ingredients you will need:

1/2 box of angel hair pasta
1 lb. ground beef
1/2 bell pepper
1 packet of taco mix
1 jar of salsa (mild or medium, according to your taste)
1/2 cup picante sauce (if desired)
1 pack (2 cups) of Four Cheese Mexican Blend shredded cheese

Directions:

Preheat oven to 350 degrees. Dice the bell pepper and set it aside.

Prepare pasta according to directions on box.

While pasta is boiling, brown the ground beef, adding bell pepper as beef is almost finished browning. Drain grease, then add taco mix to ground beef according to directions on packet.

Drain pasta and return noodles to pot, removing from heat.

Add the taco beef/bell pepper mixture, salsa to your juiciness preference, picante sauce, and 1 and a half cups of the Mexican blend cheese. Mix together well. Then spread evenly in 9×12 lightly greased casserole dish.

Bake at 350 degrees for 20 minutes. Remove from oven and spread remaining 1/2 cup of cheese evenly over pasta. Return to oven and continuing cooking for 5 – 8 minutes, or until cheese is melted.

    Oh wow – this was really good! My husband gave his usual, “It’s pretty good,” with the cadence of his grudging voice sounding like there was a “but” coming, but I’ve learned over the years that it’s not possible to get an unqualified “This is good!” out of him, so.. tough! He can just eat what I like! I’m going to make this the next time my sister comes to visit.

    I was really surprised how hot it was with the medium salsa I used. It never tastes hot with chips!

    Thanks for the great recipe. And for anyone reading this, I would say that you don’t need angel hair pasta – any spaghetti would work.
